Grouper Fillet in Sauce

The snapper is a highly valued fish in Cuba. It inhabits coastal areas, in sandy and rocky bottoms, at depths between 20 and 40 meters. It can reach depths of 250 meters or more when it migrates to deeper waters in winter. It is said that the quality of its meat is due to its diet of shellfish, shrimp, mussel larvae, and small fish. Snapper is an ideal fish for grilling, broiling in golden fillets, or baking with potatoes. In this recipe, Chef Ivan demonstrates how to prepare delicious and juicy snapper fillets that will leave no one indifferent.
Ingredients:
  • 4 snapper fillets
  • Salt and pepper to taste
  • ½ green pepper
  • ½ red pepper
  • 1 large onion
  • 1 ripe tomato cut into cubes
  • 3 garlic cloves, crushed
  • 50 ml of olive oil
  • 50 ml of dry wine
  • 2 tablespoons of hot sauce
  • For the garnish:

    • 400 grams of macaroni
    • 500 ml of cream
    • 200 grams of grated mozzarella cheese
    • salt and pepper to taste

Instructions:

The first step of this recipe is to sear the fish meat.

In a pan, add a little salt and when it's hot, place the snapper fillets skin-side down; this way, it will brown and stay flat. Otherwise, cooking causes it to curl up and lose its shape.

They should stay that way, over medium heat, for 5 minutes. Then remove them from the skillet and set them aside.

To make the sauce in a pot, heat the olive oil. Add the onion diced into brunoise, and when it starts to change color and brown, add the peppers, garlic, and then the diced tomato.

Remove to integrate all the elements. Check the salt and pepper, and let it cook for about 8 minutes. When it reaches a high temperature, add the wine and let this sauce reduce over low heat.

The reduction of the wine with the onion and peppers will begin to become syrupy. At this point, add the fillets of snapper that you had preserved. Place them in the sauce and cover them carefully so that the portions do not break; otherwise, the plating will be affected.

Let them cook covered over medium heat for about 5 minutes. After this time, they will be ready to serve.

The chef Iván presented this dish accompanied by macaroni with cheese sauce and a warm chard salad.

If you want to make this side dish, cook the macaroni conventionally and once they are soft, drain them and set them aside. In a pot, heat the cream over medium heat, and before it comes to a boil, add the mozzarella cheese. Stir well and add the macaroni to this delicious sauce. Adjust the salt and pepper to your liking.
