The Guantanamo chef Dailis Ferrer, residing in Spain, shared a traditional Cuban menu that she made this weekend for her family. The video evoked nostalgia among her followers, both on and off the island.
Dailis said she wanted to eat "a good Cuban menu like in the old days" and got to work to delight her husband and son.
He prepared a delicious side of yuca with mojo; moro rice, with its black beans softened in the pressure cooker; and avocado salad.
The main dish and king of the Cuban table was a large piece of roasted pork. It had its crispy skin and everything. It was finger-licking good.
The dessert was the icing on the cake of this lunch. If you are Cuban and live anywhere in the world that isn't Cuba, you'll feel like going to the market today to buy condensed milk, because it made... a little dessert with sweet cookies!
Dailis's video has accumulated thousands of interactions. Most of the messages are testimonies of nostalgia for Cuban food and for the act of sharing it with family, something that many of us cannot do because we are scattered around the world and sometimes alone.
Those who are on the island cannot eat these foods due to their high prices. Enjoying the act of eating traditional Cuban food with family is becoming increasingly difficult. After decades of crisis, many recipes could be lost in the collective memory.
A follower asked Dailis to always cook Cuban food because "we cannot lose our roots."
