Ingredients:
8 cups of yogurt
1 tablespoon of salt
Instructions:
Place the yogurt in a container and set it in a water bath for the required time until it separates and thickens. Pour it into a soaked and wrung-out cloth bag. Allow it to drain until it reaches the desired firmness. (The longer it drains, the firmer the cheese will be.) Raw cottage cheese can be made simply by draining the yogurt in the cloth without needing to heat it in a water bath.
