Ingredients:
2 pounds of potatoes 2 tablespoons of lard or oil 2 cloves of garlic 1 small chili 2 sprigs of parsley 1 onion ½ cup of tomato puree or vita nova sauce ¼ cup of dry wine 2 teaspoons of salt 1 bay leaf ½ teaspoon of oregano 1 cup of boiling water or broth 3 hard-boiled eggs ½ pound of ham or other sausage
Instructions:
Peel the potatoes, cut them into medium pieces, and fry them in hot fat. In that same fat, prepare a sauté with garlic, bell pepper, onion, parsley, and tomato sauce. Add the potato pieces to the sauté, and add the other ingredients except for the ham and the eggs. Cover well and cook until the potatoes are soft, then add the ham until the stew dries out. At the time of serving, add the chopped hard-boiled eggs in half.
