Ingredients:
  • 5 medium-sized calamari per person
  • 4 tablespoons of oil
  • 5 cloves of garlic
  • 1 sprig of parsley
  • Salt to taste
Instructions:
Clean the squid thoroughly, discarding the tentacles, the quill, the skin, and everything inside. Heat a griddle over low heat and add a tablespoon of oil, then place the squid on it. Keep the heat low and turn the squid occasionally on both sides, making sure they don't burn. Cook for no more than 2-3 minutes on each side. Just before removing them from the griddle, sprinkle with salt. In a bowl, combine the remaining oil with finely chopped garlic and parsley. Mix everything well until you achieve a homogeneous mixture. Arrange the squid on a serving dish and drizzle the garlic and parsley oil over them. Serve hot, optionally accompanied by slices of tomato and a bit of lettuce.
