- 4 green plantains
- 1 onion, diced finely
- ¼ cup of lard or vegetable oil
- 3 or more cloves of garlic
- ¼ teaspoon of pepper
- ½ tablespoon of salt
- 3 cups of water
- juice of a lemon
Wash and peel the plantains. Cut them into medium-sized pieces and boil them with a splash of lemon juice. Add salt to taste. When the plantains are soft, keep them in the hot water until it's time to prepare the fufu.
In a skillet, heat the lard. Add the minced garlic and the diced onion. Once the onion becomes translucent, add the drained bananas. Cook on the heat, stirring for a few minutes.
Remove the pan from the heat and mash the mixture, ensuring that all the ingredients are well combined. If you find it too dry or stiff, add a bit of the cooking water from the bananas until it reaches your desired consistency. Adjust the salt to taste and add pepper if you like.
This dish can be made using cracklings, fried bacon, or fried pork chunks, which will give it a spectacular flavor. It also serves as a great accompaniment to beef stew.
