Ingredients:
1 tablespoon of butter
1 ripe salad tomato
2 eggs
Salt and pepper to taste
Instructions:
Melt the butter in a small skillet, being careful not to let it burn; slice the tomato into thick rounds and place them in the skillet; crack the eggs over the tomato rounds and sprinkle them with salt and pepper. Cook them covered over low heat until set.
