- 4 servings of chicken
- 1 sour orange or lemon
- salt, cumin, and pepper to taste
- 5 cloves of garlic
- 1 onion
- 1 cup of frying oil
Season the chicken with salt and pepper. Add the sour orange juice, the crushed garlic (rubbed in), and the cumin. It's best to let it marinate for at least two hours before frying.
In a deep skillet, add the oil. Once the oil is warm, incorporate the chicken. Keep the heat on medium, allowing the chicken to cook while turning it occasionally to ensure even browning. To check for doneness, pierce the chicken and ensure no juices or blood run out. When it is nearly done, increase the heat and give it a quick burst of heat to finish browning and achieve a crispy texture.
To make mojo criollo, heat some oil in another pan, then add crushed garlic and julienned onion. Cook over medium heat, stirring occasionally, and when the onion starts to become translucent, add a bit of sour orange juice. Let it cook for a couple more minutes, then pour it over the chicken. Serve hot and enjoy!
