Ingredients:
- 1 pound of wheat flour
- 3 egg yolks
- 1 tablespoon of sugar
- ½ teaspoon of salt
- 4 tablespoons of butter
- frying lard
- 1 cup of water
- 1 tablespoon of dry wine
- 1 cup of ground beef, shredded chicken, or fish
Instructions:
Place ¾ of a pound of sifted flour on a marble surface, make a well in the center, and add the egg yolks, sugar, salt, dry wine, and butter. Mix everything together and gradually add water, kneading with your hands as little as possible.
Roll out the dough with a rolling pin until it reaches the thinnest thickness, cut it into circles, and place a tablespoon of filling in the center.
Fold them by joining the edges and fry them in hot butter. Let them drain on absorbent paper.
The scraps can be utilized by cutting them into narrow strips, making cuts in the center, and frying them in hot fat. They are sprinkled with powdered sugar and served alongside the pastries.
