Yuca with Mojo is one of the most traditional dishes in Cuban cuisine. We consume it as a side dish, although more than one person likes to eat it as a starter. Yuca is also known as cassava. It is a tuber native to the tropical areas of America. It is an economic crop and its consumption has spread worldwide. There are countless dishes featuring yuca as the main ingredient, but the majority of Cubans undoubtedly choose Yuca with Mojo.
Ingredients:
  • 2 pounds of cassava
  • 4 cloves of garlic
  • 1 lime or sour orange
  • Oil
  • Salt to taste
Instructions:

Peel the cassava and cut it into pieces, heat the water beforehand, and put the cassava to boil.

After it boils for about 10 minutes, drain the water and add cold water. You can repeat the process until the cassava starts to soften. Finally, add salt and let it continue to soften.

In a pan, put the oil until it's hot. Then add the crushed garlic and the juice of the sour orange or lemon.

Other versions: you can add chicharrones or fried pork bits with onions in mojo.
