- Half of a medium-sized green papaya
- 1 cube of concentrated chicken broth
- 1 clove of garlic
- Half an onion
- Half a red bell pepper (preferably)
- 250 grams of any well-cooked, soft pasta
- 1 whole egg
- 100 milliliters of oil
- 1 teaspoon of sugar
- Salt and vinegar to taste
The green papaya is cut into small cubes and boiled with concentrated chicken broth. It is cooked until tender, without falling apart, then removed from the heat and allowed to cool.
In the blender, place the cooked pasta, add the clove of garlic, the onion, and the pepper, preferably chopped. Add the whole egg and blend. Gradually add the oil, which should be poured in a thin stream.
When a smooth, homogeneous paste is achieved, add the salt, vinegar, and sugar, and adjust the flavor to your liking.
Once the dough is ready, it is mixed with the boiled papaya and decorated with whatever ingredients are available, then left to cool in the refrigerator for a while.
This is the basic recipe, but if possible, you can add hard-boiled eggs, some meats, or other vegetables to create a delicious cold salad. Enjoy your meal!
