The Revoltillo a la Jardinera is an ideal dish for weekend breakfasts. It takes little time, is light, and very delicious. Jardinera is a type of vegetable cut necessary to prepare a fruit or vegetable salad. The most common combination includes carrots, potatoes, green peas, and sometimes green beans. This combination of vegetables can be found as frozen products, canned, or you can make it at home with fresh ingredients. We hope you enjoy this simple yet very tasty and nutritious recipe.
Ingredients:
  • 3 eggs
  • 3 tablespoons of oil
  • 250 grams of garden salad (mixed vegetables)
  • 1 onion
  • Salt and pepper to taste
Instructions:

Boil the garden salad for 10 minutes. Drain it and set it aside.

Cut the onion into brunoise. Lightly beat the eggs and set them aside.

In a pan, heat the oil. Add the chopped onion and when it begins to turn translucent, add the vegetables. Then incorporate the beaten eggs and stir to mix the ingredients.

Cook them over low heat, stirring constantly until the scramble reaches your desired doneness. It should not be too raw, nor overcooked, as it loses juiciness.
