Eggs are one of the foods that we Cubans miss the most at breakfast, due to the scarcity of this product on the Island and the continuous regulations it is subjected to. Despite this, many of us, whenever we can, enjoy fried eggs or a good cheese, ham, or plain omelet for breakfast. This dish is also common for a light and easy lunch.
The omelet is of French origin and is known in the professional cooking world as Tortilla Francesa, or Omelette. To make a proper omelet, the texture should be soft and tender, the eggs on the outside should not be too browned, and the inside should be cooked but not dry. The secret is to use low heat for cooking and a good pan, one of those that, no matter how old it is, nothing sticks to it.

Ingredients:
- 4 eggs
- 2 tablespoons of oil
- ½ cup of grated cheese
- ¼ teaspoon of salt
- pepper to taste (optional)
- ham, onion, bell peppers (optional)
Instructions:
Lightly beat the eggs. Add salt to taste.
In a pan, heat the butter or oil. Pour in the beaten eggs and let cook on low heat.
Before the egg is fully set, add the grated cheese, fold the omelet, and let it cook for one minute on each side.
Serve it fresh out of the oven so that the cheese is melted when cutting it.
Remember that you can use other ingredients of your choice.
