Eggs are one of the foods we Cubans miss the most at breakfast, due to the scarcity of this product on the Island and the continuous regulations it is subject to. Nevertheless, many of us, whenever we have the chance, enjoy fried eggs or a delicious cheese, ham, or plain omelet for breakfast. This dish is also common for a light lunch as it’s easy to prepare.
The omelet originates from France and is known in the professional culinary world as Tortilla Francesa, or simply Omelette. To make a proper omelet, the texture should be soft and tender; the outer part of the egg should not be overcooked, while the inside should be set but not dry. The secret lies in cooking over low heat and using a good-quality pan, one of those that you know won’t stick after many years of use.

Ingredients:
- 4 eggs
- 2 tablespoons of oil
- ½ cup of shredded cheese
- ¼ teaspoon of salt
- pepper to taste (optional)
- ham, onion, peppers (optional)
Instructions:
Lightly beat the eggs. Add salt to taste.
In a skillet, heat the butter or oil. Pour in the beaten eggs and let them cook on low heat.
Before the egg is fully set, add the grated cheese, fold the tortilla, and let it cook for one minute on each side.
Serve it freshly made so that the cheese is melted when you cut it.
Remember that you can use other ingredients to your liking.
