Use:
Corn fritters are widely consumed in Cuba. They are made from young corn, although there are recipes using dried corn flour.
Ingredients:
1 cup of ground sweet corn.
1 spoon of sugar.
2 cloves of garlic
3/4 teaspoon salt.
1 egg.
oil for frying.
Instructions:
Let the sweet corn sit. If you use a lot, the liquid that separates can be used for other preparations, for example majarete.
Mix the dense corn with the sugar, garlic, salt and beaten egg.
Drop this mixture, by small spoonfuls, into very hot oil until golden brown. If the oil is not hot enough, the frying will fall apart.
If you notice that they still do not fry well, apply plan B. Add a tablespoon of wheat flour, mix well and try frying in very hot oil again. Some pretty and equally delicious fritters will come out.
There is a second trick for those of us who live outside the Island and find tender corn difficult to obtain. They can be made with canned sweet corn. Drain all the water from a 400 gram can, beat all the ingredients well as if it were sweet corn and fry in hot oil.
