Revoltillo a la Jardinera is an ideal dish for weekend breakfasts. It takes little time to prepare, is light, and very tasty. "Jardinera" refers to a specific way of cutting vegetables needed to make a mixed salad, whether of fruits or vegetables. The most common combination includes carrots, potatoes, green peas, and sometimes green beans. You can find this mix of vegetables as frozen or canned products, or you can make it at home using fresh ingredients. We hope you enjoy this simple yet delicious and nutritious recipe.
Ingredients:
  • 3 eggs
  • 3 tablespoons of oil
  • 250 grams of garden salad (mixed vegetables)
  • 1 onion
  • Salt and pepper to taste
Instructions:

Boil the garden salad for 10 minutes. Drain it and set it aside.

Dice the onion finely. Lightly beat the eggs and set them aside.

In a skillet, heat the oil. Add the chopped onion, and when it starts to become translucent, add the vegetables. Then incorporate the beaten eggs and stir to mix the ingredients together.

Cook them over low heat, stirring constantly until the scramble reaches your desired consistency. It should not be too runny or overcooked, as that would lose its tenderness.
