- 4 grapefruits or 6 sour oranges
- 6 cups of white sugar
- 2 cups of brown sugar
- 4 cups of water
- 1 cinnamon stick
- 4 drops of vanilla essence
Peel the grapefruits. Try to make a superficial cut of the bark so that the hulls are not damaged and remain homogeneous.
Cut each grapefruit into 8 equal pieces. Remove the skins. Put the hooves in a pot of water the night before. The next day change the water and boil for 15 minutes. Drain and change the water a second time. Boil them again for another 15 minutes. Repeat this operation two more times, always changing the water. They should be boiled until they look somewhat transparent.
Drain the grapefruit rinds as best as possible. In a large saucepan, boil 4 cups of water with sugar, cinnamon and a few drops of vanilla essence. When the syrup has boiled for approximately 5 minutes, add the grapefruit (or orange) rinds. Let them cook over low heat for about 30 minutes, or until the syrup is to your liking.
