A delicious and easy-to-make recipe that makes the most of leftovers. It is quite common on the Island and reflects the influence of Asian cuisine in Cuba. These types of dishes are typically prepared in a large pan known in Asia as a wok. Fried Rice is the king of stir-fried rice dishes in Cuba. Enjoy!
Ingredients:
- 1 pound of cooked rice
- ½ pound of ham
- 1 cup of cooked or boiled shrimp
- 2 beaten eggs cooked as scrambled eggs
- 2 chopped garlic cloves
- 1 chopped onion
- 3 smoked boneless pork ribs
- ½ cup of vegetable oil
- 1 cup of boiled chicken, cut into pieces to taste
- ¼ cup of fried and chopped pork cracklings
- ¼ cup of soy sauce
- 2 cups of Chinese beans
Instructions:
Cut the ham and smoked pork into strips. Cut the chicken into pieces as you prefer. Chop the onion and garlic into small cubes.
Place the other ingredients inside a large pot and sauté them. Gradually add the rice that has been pre-cooked.
Gradually add the remaining ingredients, adding a bit of oil and soy sauce each time, until everything is well combined.
If you try it and find it lacking in salt, you can add a bit more, stirring it all together well.
Add the previously washed and drained Chinese beans. Also, sprinkle finely chopped scallions on top. Enjoy!
