Squid in ink

A delicious dish to enjoy with the family. It is a recipe that requires work if we have to clean the squid first, but if we buy it already prepared it can be a quick and elegant solution for a dinner with family and friends. Do not lose the recipe. Enjoy your meal!!
Ingredients:
  • 1 kilogram of squid
  • 3 oil tablespoons
  • 6 cloves of garlic
  • 1 onion
  • ½ cup chopped chili
  • 1 cup of red wine
  • 1 tablespoon tomato puree
  • 1 tablespoon of salt
  • ¼ teaspoon ground pepper.
Instructions:
Clean the squid and save the ink sachets. Cut the squid into pieces, including the tentacles. Sauté them lightly in the hot oil. Little by little add the sauté ingredients: garlic, onion, chili and parsley. Add the tomato, wine, salt and pepper. Crush the ink bags in a mortar and mix them with a little of the sauce; add it to the sauce. Let them cook, over low heat, for about 20 minutes. If you want to curdle the sauce, you can use some toasted breadcrumbs. When serving, add 2 or 3 tablespoons of chopped parsley and more crushed garlic or chopped raw onion, if desired.
