La Vaca Frita is a dish that is very similar to Cuban Ropa Vieja. However, it has fewer ingredients and is quicker to make. Both are recipes that use beef brisket, a good quality meat, but very fibrous and gelatinous. The skirt is located in the hanging muscular portions of the posterior third between the leg and the shoulder. It is used in stews and stews. But since it is very fibrous, it tends to crumble. In the Cuban fields, when a beef or a pig was killed, all the meat had to be cooked because there were no refrigeration methods. Therefore, the entrails were cooked and the greatest amount of meat was roasted or fried. The skirt, being a little leathery, was relegated for another time, perhaps that's where the tradition comes from.
Ingredients:
  • 500 grams of beef (skirt)
  • 4 cloves of garlic
  • 1 lemon or sour orange
  • 1 chili (can be any type)
  • ½ onion
  • Salt and pepper to taste
  • 4 tablespoons of butter or oil
Instructions:

Cook the beef brisket in a pressure cooker with water and salt. It should be at medium temperature for approximately 30 minutes. When it is soft, remove it from the broth, but preserve it for other preparations.

Wait for the meat to cool, shred it and remove any excess fat. Season it with salt and pepper to your liking, add the lemon or sour orange juice and set it aside.

In a frying pan, heat the oil and brown the sliced garlic. When it is ready, add the chili and onion cut into brunoise and the shredded meat. Let it sauté over medium heat, otherwise it will become too dry. If you wish, you can add a little of the cooking broth to make it juicier, but since you are preparing fried beef, the idea is for it to be a dry dish.

This meat is usually eaten with white rice, beans and some salad. It can also be used in sandwiches and to make small canapés at a friends party.
