Ingredients:
4 large eggplants
Salt and pepper
100 grams of grated cheese
4 eggs
1 small cup of milk
Oregano and ground chili pepper
Instructions:
Wash the eggplants, dry them, and peel them. Cut them into small cubes, sauté them in a bit of oil, then remove from heat and add the cheese. Season to taste. Grease a pizza pan. Beat the eggs with the cup of milk. Add the oregano and crushed red pepper. Pour the mixture over the eggplants already arranged in the pizza pan. Bake in a moderate oven for approximately 20 minutes.
