Chicharrones are enjoyed in Cuba at any time of the year. But if you go to a New Year's party, you can be sure there will be chicharrones. If you're having some beers at home, nothing beats pairing them with chicharrones. And if you run out of oil, don’t let yourself go without fat; fry up some chicharrones to make use of the lard.

Ingredients:
- 2 pounds of pork fat
- salt to taste
- water
Instructions:
Cut the pork fat into cubes, place it in a pot, add salt to taste, and cover it with water. Simmer until the water evaporates, stirring frequently to prevent sticking. The fat that renders will fry the chicharrones until they become crispy. Reserve the lard for other recipes.
