One of the Cuban desserts that is most remembered from childhood iscaramelized coquitos. They were cheap and could be bought at any candy stall, but you hardly see them on the island anymore.
This dessert has only two ingredients: grated coconut and sugar. Despite being a simple, delicious and quick recipe to make, it is consumed less and less in the country due tosugar shortage that the people of Cuba suffer.
TheCuban chef Dailis Ferrer, resident in Spain, showed hisrecipe for caramelized coquitos and here we share it so that you can make them and enjoy them with the little ones at home.
Caramelized coquitos
In the ingredients of thisrecipe for caramelized coquitos we have: 250 grams of grated coconut, 200 grams of white sugar and 500 ml of water. For the caramel you will need 1 ¼ cup of sugar (250g) ¼ cup of water (60ml).
First you must mix the grated coconut, sugar and water in a saucepan and cook over medium heat until you have a thick coconut candy that, when cool, allows you to make coconut balls.
Then you will prepare a caramel, mixing the sugar and water in another saucepan. Let it brown and gradually dip the coconut balls in it.
Put the caramelized coquitos on a greased tray or on baking paper, so you can remove them easily.
