Note
This empanada is very quick and easy to make and is a healthy option for dinners and snacks, as well as another way to enjoy fish. You can fill it with any vegetables you have, and also with any meat leftover from the previous day, like chicken or ground beef.
Ingredients
- 3 cans of tuna
- 2 sheets of pastry dough for empanadas or one sheet of empanada dough and one sheet of puff pastry
- 1 egg
- half an onion
- half a bell pepper
- 1 tomato
- 2 tablespoons of olive oil
- Salt to taste
- grated cheese for gratin
- Optional: pepper or other spices to taste
Instructions
Preparation of the mixture:
- Open the cans of tuna and drain them. If they're in olive oil, you can use that same oil for the mixture. Set aside.
- Cut the pepper and onion into strips and sauté them in the pan with 2 tablespoons of olive oil until they are golden.
- Add the tuna and the diced tomato to the sauté and cook everything for a few minutes. Add a bit of salt and any spices you like.
- Roll out the dough on a piece of parchment paper on the baking tray and spread the mixture evenly over the entire surface of the dough. Use a fork or a spoon to help, being careful not to tear the dough.
- Once you have the bottom layer of the empanada ready, you can add some chopped olives and sprinkle grated cheese on top.
- Handle the other dough for the pastry or puff pastry very carefully, if you prefer the top part to be flaky, and roll it out like a sheet, ensuring that the edges align.
- Now, with a fork, seal the edges and poke small holes all over the cake.
- Beat the egg and, using a kitchen brush, a makeup pad, or your fingers, spread it evenly over the surface to achieve a golden color. Make sure to apply it well. This is to add color. If you use too much, it will taste like an omelet. Avoid egg deposits by spreading it evenly.
Preparation for baking:
- Preheat the oven to 200 degrees, both top and bottom, while you prepare the dough, so it will be hot when you put the pastry in.

You can use the pizza cutter to slice the empanada. Wait for it to cool down and enjoy sharing!
You can also make just half of the empanada using a single sheet of dough and folding it in half with just one can of tuna. If you prefer, you can use more or fewer cans of tuna depending on whether you like it with more or fewer vegetables than fish.
