Ingredients:
- 500 g of spaghetti or your preferred pasta
- 500 g of raw prawns or large shrimp (about 15 prawns)
- 200 ml of cooking cream can be plant-based
- ½ onion
- 3 cloves of garlic
- 75 g of grated Grana Padano or Parmesan cheese
- ½ glass of white wine
- Extra virgin olive oil
- Salt and pepper (to taste)
- Oregano or parsley for decoration
Instructions
Preparation:
- Peel and clean the prawns well. Remove the central vein (intestine) using the tip of a knife. Set aside.
- In a large pot with water, add a bit of salt and a splash of olive oil.
- When the water comes to a boil, add the spaghetti and cook it according to the time indicated on the package.
- It's important to remember that the sauce shouldn't wait for the spaghetti, so it's best to cook the pasta beforehand or at the same time you're preparing the sauce.
- In a large skillet, add a bit of olive oil and sauté the finely chopped onion over medium heat.
- When it becomes transparent, add the chopped garlic and sauté everything together for a few minutes until it takes on color.
- Add the peeled prawns to the sauté, sprinkle in a pinch of salt and pepper, and cook for 2 to 3 minutes, stirring occasionally.
- Add the white wine and let the alcohol evaporate (about 2-3 minutes more).
- When the wine has reduced, add the cooking cream and mix well.
- Cook for a few minutes over low heat
- Drain the spaghetti and add it directly to the pan with the sauce.
- Mix well so that the flavors combine.
- Add the grated cheese and stir again with the heat on for a few more seconds.
Serve immediately, sprinkle a bit of oregano or chopped fresh parsley on top, and it's ready to enjoy!
