Note
A delicious, simple dish full of flavor, perfect for using up leftover pumpkin. It can be enjoyed as a snack, dessert, or as a side to your everyday meals.
Ingredients
- 500 g of cooked pumpkin (approximately half of a small pumpkin)
- 1 egg
- 2 to 5 tablespoons of flour (depending on the consistency)
- 2 tablespoons of white sugar
- ½ teaspoon of ground cinnamon
- ¼ to ½ teaspoon of butter
- ½ teaspoon of salt
- Frying oil
Instructions
Preparation:
- To cook the pumpkin (if it is not cooked):
- Peel and cut the pumpkin into small pieces.
- Boil it in a pot with plenty of water and a teaspoon of salt for 15-20 minutes, or until it is tender.
- Drain it and let it lose the excess water on paper towels.
Prepare the mixture:
- With a fork, mash the pumpkin until you achieve a smooth puree.
- Incorporate the sugar, the egg, the cinnamon, the butter, and the flour. Mix well until a smooth dough forms.
- Adjust the amount of flour based on the consistency: if it's too liquid, add more flour until the dough is manageable, or they will fall apart when you fry them.
Refrigerate:
- Place the mixture in the refrigerator for 15 minutes to firm up.
- Fry the fritters:
- Heat frying oil in a wide skillet.
- With two spoons, start pouring portions of the batter into the hot oil, forming fritters of your desired size.
- Fry on both sides until golden brown. If the dough falls apart while frying, add more flour.
Drain and serve:
- Let the fried items drain on paper towels to remove excess oil.
- Serve them sprinkled with sugar, cinnamon, or enjoy them on their own.
- Perfect for pairing as if they were fried ripe plantains, combining the sweet and savory flavors that we Cubans enjoy. They can also be eaten alone as a snack.
