Note
A comforting classic with a healthy twist thanks to the vegetables.
Ingredients
For the lasagna:
- 1 package of lasagna sheets
- Fried or crushed tomato purée
- Grated cheese (mozzarella or melting cheese blend)
For the meat filling:
- 1 kg of ground pork and beef
- Spices to taste: salt, onion, oregano, cumin, black pepper
- Optional: raisins, chopped olives, lemon juice
- Olive oil
- A splash of dry wine or white wine
- A splash of broth (chicken, meat, or vegetables)
For the vegetable filling:
- 1 zucchini
- 1/2 green pepper
- 1/2 red bell pepper
- 1 cup of fresh spinach
- 1/2 eggplant
- some broccoli stems
- Olive oil
For the béchamel:
- 100 g of butter
- 100 g of flour (it can be a plant-based flour, such as chickpea flour. The important thing is that it's the same amount of flour as butter)
- 600 ml of milk (it can be plant-based; if you prefer a thinner consistency, add up to 1 liter of milk)
- Salt
- Nutmeg
Instructions
Preparation:
Bechamel:
- Melt the butter in a small saucepan over medium heat.
- Add the flour and stir until you obtain a smooth paste.
- Gradually incorporate the milk, continuing to whisk with a whisk to avoid lumps.
- Cook the mixture until it thickens and bubbles gently.
- Add salt and nutmeg to taste. Set aside.
Meat filling:
- Season the meat with the spices and seasonings of your choice.
- Heat olive oil in a skillet and sauté the meat over medium heat.
- Add a splash of dry wine and cook covered. If it becomes too dry, add a bit of broth.
- Cook over low heat until the meat is just right, with little moisture. Set aside.
Vegetable filling:
- Cut the zucchini, peppers, broccoli, and eggplant into small pieces.
- Sauté the vegetables in olive oil until they are golden brown.
- Wash and chop the spinach (no pre-cooking needed). Set aside.
Assembly of the lasagna:
- Prepare the lasagna sheets according to the package instructions (some need to be soaked in hot water).
- In the bottom of a baking tray, spread a thin layer of tomato puree.
- Place a layer of lasagna sheets.
- Alternate layers of:
- Tomato sauce, béchamel, sautéed vegetables, grated cheese, lasagna sheets, tomato sauce, béchamel, and ground meat. If you wish, you can add more layers of vegetables than meat or vice versa.
- Repeat until the tray is full. Finish with a layer of lasagna sheets topped with tomato sauce, béchamel, and grated cheese.
Baking:
- Preheat the oven to 180 °C (top and bottom heat).
- Bake the lasagna for about 20 minutes, or according to the instructions on the package of the sheets.
- Let it rest for a few minutes before serving.
