Lasagna with ground beef and vegetables

Note

A comforting classic with a healthy twist thanks to the vegetables.

Ingredients

For the lasagna:

  1. 1 package of lasagna sheets
  2. Fried or crushed tomato purée
  3. Grated cheese (mozzarella or melting cheese blend)

For the meat filling:

  1. 1 kg of ground pork and beef
  2. Spices to taste: salt, onion, oregano, cumin, black pepper
  3. Optional: raisins, chopped olives, lemon juice
  4. Olive oil
  5. A splash of dry wine or white wine
  6. A splash of broth (chicken, meat, or vegetables)

For the vegetable filling:

  1. 1 zucchini
  2. 1/2 green pepper
  3. 1/2 red bell pepper
  4. 1 cup of fresh spinach
  5. 1/2 eggplant
  6. some broccoli stems
  7. Olive oil

For the béchamel:

  1. 100 g of butter
  2. 100 g of flour (it can be a plant-based flour, such as chickpea flour. The important thing is that it's the same amount of flour as butter)
  3. 600 ml of milk (it can be plant-based; if you prefer a thinner consistency, add up to 1 liter of milk)
  4. Salt
  5. Nutmeg

Instructions

Preparation:

Bechamel:

  1. Melt the butter in a small saucepan over medium heat.
  2. Add the flour and stir until you obtain a smooth paste.
  3. Gradually incorporate the milk, continuing to whisk with a whisk to avoid lumps.
  4. Cook the mixture until it thickens and bubbles gently.
  5. Add salt and nutmeg to taste. Set aside.

Meat filling:

  1. Season the meat with the spices and seasonings of your choice.
  2. Heat olive oil in a skillet and sauté the meat over medium heat.
  3. Add a splash of dry wine and cook covered. If it becomes too dry, add a bit of broth.
  4. Cook over low heat until the meat is just right, with little moisture. Set aside.

Vegetable filling:

  1. Cut the zucchini, peppers, broccoli, and eggplant into small pieces.
  2. Sauté the vegetables in olive oil until they are golden brown.
  3. Wash and chop the spinach (no pre-cooking needed). Set aside.

Assembly of the lasagna:

  1. Prepare the lasagna sheets according to the package instructions (some need to be soaked in hot water).
  2. In the bottom of a baking tray, spread a thin layer of tomato puree.
  3. Place a layer of lasagna sheets.
  4. Alternate layers of:
  5. Tomato sauce, béchamel, sautéed vegetables, grated cheese, lasagna sheets, tomato sauce, béchamel, and ground meat. If you wish, you can add more layers of vegetables than meat or vice versa.
  6. Repeat until the tray is full. Finish with a layer of lasagna sheets topped with tomato sauce, béchamel, and grated cheese.

Baking:

  1. Preheat the oven to 180 °C (top and bottom heat).
  2. Bake the lasagna for about 20 minutes, or according to the instructions on the package of the sheets.
  3. Let it rest for a few minutes before serving.
