Ingredients
(For 1 person)
- 1 eggplant
- A few tablespoons of tomato puree (fried, crushed, or whatever you have on hand)
- Sliced or shredded cheese (whichever you prefer)
- Filling of your choice:
- Slices of turkey or cooked ham
- 1 can of tuna
- Leftover cooked meat (ground beef, chicken, etc.)
Instructions
Prepare the eggplant
- Wash and slice the eggplant into approximately 4 mm thick rounds.
- Place them on a plate and microwave for 6 minutes, until they are tender.
Assemble the lasagna
- In an oven-safe or air fryer-friendly dish, brush a little olive oil.
- Place a layer of eggplant, add tomato, your chosen filling, and cheese.
- Repeat the process until completed.
- The last layer should be eggplant topped with tomato and cheese for gratin.
Cooking
- Air fryer: 15 minutes at 200 °C.
- Oven:
- 1 eggplant → 15 minutes at 200 °C.
- 2–3 eggplants → 20 to 25 minutes at 200 °C.
Ready to enjoy! You can pair it with a fresh salad or toasted whole grain bread.
