Ingredients

  • 1 pork leg (6 libras aprox.)
  • 1 head of garlic
  • 3/4 cup of sour orange juice
  • 1 tablespoon of oregano
  • 2 teaspoons of cumin
  • 1/2 teaspoon of pepper
  • 2 tablespoons of salt
  • 1 pound of onions

Instructions

Clean the pork leg. You can pierce it with a knife in several places to allow the marinade juices to penetrate the meat. Although this step is not mandatory, especially if you prepare it the night before.

Mash the garlic, add the salt, oregano, cumin, pepper, and the juice of sour oranges. Rub the leg well with this marinade. Cover it with the sliced onions and let it rest for at least 12 hours.

Roast Pork Leg

Bake at 325ºF (160ºC) for approximately 4 hours. Remember that each oven has its own characteristics. To prevent the meat from drying out, you should baste the pork leg with its own juices. Repeat this process several times.
