Ingredients:
- 1 pork leg (approximately 6 pounds)
- 1 head of garlic
- 3/4 cup of sour orange juice
- 1 tablespoon of oregano
- 2 teaspoons of cumin
- 1/2 teaspoon of pepper
- 2 tablespoons of salt
- 1 pound of onions
Instructions:
Clean the pork leg. You can pierce it with a knife in several places to allow the marinade juices to penetrate the meat. Although this step is not mandatory, especially if you prepare it the night before.
Crush the garlic, then add salt, oregano, cumin, pepper, and the juice of sour oranges. Rub the leg thoroughly with this marinade. Cover it with the onions sliced into rings and let it rest for at least 12 hours.
Roast it at 325°F (160°C) for approximately 4 hours. Keep in mind that each oven has its own characteristics. To prevent the meat from drying out, baste the pork leg with its own juices. Repeat this procedure several times.
