Note
This recipe is designed primarily to make the most of leftover roast meat. It's especially great for cooking in the following days, giving it a different flavor. It can even be used to utilize frozen leftovers, allowing you to enjoy them weeks later without losing their original taste.
Ingredients
To cook the meat (if it is not prepared):
- 1 piece of pork tenderloin
- Sufficient water to cover the meat.
- Salt to taste.
- 1 bay leaf.
- Oregano, cumin, and pepper (powdered or whole).
- Garlic and onion (in powder or natural pieces).
For the fried pork cow:
- Cooked pork (roasted, boiled, or leftover).
- 3 cloves of garlic
- Juice of 1 orange (seedless).
- Juice of 2-3 lemons (seedless).
- red pepper, green pepper, or both.
- ½ onion.
- 1 tablespoon of lard (or olive oil).
- Salt, oregano, and cumin (to taste).

Preparation
Cooking the meat (if it is not cooked):
- In a pot of water, add the pork tenderloin along with salt, bay leaf, oregano, cumin, pepper, garlic, and onion.
- Bring to a boil, then reduce to medium heat and cook until the meat is tender (25 minutes in a pressure cooker or longer in a conventional pot).
- Check the texture with a knife: if it slides in easily, it's ready. Let it cool
Preparation of fried beef:
- Shred the cooked or leftover meat into fine strands. Season it with salt, oregano, and cumin. Set aside.
- Mash the garlic cloves, onion, and chili using a mortar and pestle, or chop them with a manual grinder.
- In a frying pan or deep saucepan over medium heat, melt the lard or heat the olive oil.
- Add the garlic and onion. Cook for a few minutes until they are tender.
- Add the peppers and sauté everything together.
- Add the shredded meat and mix well.
- Add the orange and lemon juice.
- Increase the heat and stir constantly so that the meat begins to brown slightly. Use kitchen tongs or a large spoon to assist you.
- Watch out for the toasting! Don't let the meat fry too much, as it could become tough when it cools.
- Once the strands are golden but still juicy, turn off the heat and remove it so it doesn't continue cooking from the residual heat of the stove.
Crispy fried pork is perfect when paired with a good white rice. You can also enjoy it with bread as a sandwich.
