Meat and vegetable skewers

Note

A simple and delicious recipe that allows you to make use of leftover meats and complement them with fresh vegetables

Ingredients

Pork, beef, or chicken breast (in small tacos)

2 onions (cut into large pieces, with layers separated)

1 red bell pepper (in cubes)

1 green pepper (diced)

Wooden or metal skewers for kebabs

For the marinade:

Salt and pepper to taste

Lemon or orange juice (1-2 tablespoons)

Soy sauce (optional, for an oriental touch)

Olive oil (for drizzling and brushing)

garlic powder, onion, cumin, parsley

Options to vary:

Cherry tomatoes or cubes of fresh tomato

Sliced corn cobs

Chorizo, shrimp, or pieces of zucchini, eggplant, or carrots

Instructions

Preparation:

Step 1: Prepare the ingredients

Cutting and seasoning the meat:

  1. Cut the meat into small pieces and marinate them with salt, pepper, and lemon or orange juice.
  2. Add soy sauce if you want a different twist.
  3. Prepare the vegetables:
  4. Cut the onions into large pieces, making sure to keep several layers together so they can be easily skewered.
  5. Cut the peppers into squares similar in size to the meat tacos.

Step 2: Assemble the skewers

  1. Alternate pieces of meat with vegetables (onion, red pepper, green pepper, or other options) on the skewers.
  2. Place the skewers on a plate and pour the remaining marinade over them so they can absorb more flavor.

Cooking:

In air fryer:

  1. Preheat the air fryer to 180 °C.
  2. Place the skewers and select the chicken cycle (or manual program for 20 minutes at 180 °C).
  3. Turn the skewers halfway through cooking and brush them with the marinade.

In barbecue:

  1. Place the skewers on the hot grill.
  2. Turn them regularly so they cook evenly.
  3. Use a brush to baste the skewers with the marinade while they cook.

In the oven:

  1. Preheat the oven to 180 °C.
  2. Place the skewers on a tray lined with parchment paper.
  3. Cook for 20-25 minutes, turning them halfway through and brushing them with the marinade.

Additional tips:

  1. Soak the wooden skewers in water for 30 minutes before using them to prevent them from burning during cooking.
  2. Serve the skewers with rice, salad, or toasted bread for a complete meal.
  3. Customize the skewers with your favorite ingredients, such as shrimp, zucchini, or chorizo.
  4. If you have leftover vegetables or meats, make another skewer with all the scraps.
