A hearty dish, full of flavor and perfect for sharing with family. This stew combines the juiciness of pork with the sweetness of corn and the creaminess of potatoes, all cooked over high heat in a pressure cooker, resulting in a dish that can bring anyone back to life.
Ingredients
- 500 g of pork with some fat
- 500 g of chopped pork ribs
- 2–3 tablespoons of lard
- 1 large onion, chopped
- 3–4 chopped garlic cloves
- 2 tablespoons of tomato purée
- 1 chili pepper (optional, to taste)
- Thyme, rosemary, parsley, and fresh chives (to taste)
- 4 peeled and chopped potatoes
- 2–3 ears of corn, sliced into rounds
- Salt and pepper to taste
- Enough water to cover
- Olives optional

Preparation
Seal the meat
- Heat the lard in the pressure cooker.
- Sear the meat and ribs until they are golden brown on the outside. Remove and set aside.
Sofrito base
- In the same fat, sauté the onion and garlic until they soften.
- Add the tomato puree, the chili, and the herbs (thyme, rosemary, parsley, chives).
- Season with salt and pepper to taste.
Cook the stew
- Put the meat back in the pot.
- Add the corn, the olives, and the potatoes.
- Cover with water until the ingredients are submerged.
- Close the pressure cooker and cook for 30 minutes once it reaches pressure over medium heat.
Open the pot carefully, adjust the salt, and serve hot. This stew has a flavorful broth and the meat that falls apart.
You can eat it either as a spoon dish or with rice.
