Connor is 19 years old, grew up in Key West, Florida, and has just opened a business in Austin, Texas, dedicated to authentic Cuban sandwiches: Cowboy Cubans, whose slogan says it all: from Key West to the Wild West.
Connor introduced himself to the world with a simple yet ambitious proposal. The Cuban-American wants to succeed in Texas with the sandwich recipe he has eaten his whole life, without tricks and with the same love it is made in the city closest to Cuba on U.S. soil.
"I grew up in Key West, Florida, where the Cuban sandwich is not just food, it's part of the culture," Connor said in the video. "This is not something I decided to do out of nowhere. It's something I grew up with my whole life."
What sets Cowboy Cubans apart is their artisanal process. The pork is slow-roasted for 48 hours, the chicken for eight, and the entire preparation process takes between two to three days before the sandwich reaches the customer.
"In Cowboy Cubans, everything is done well. No shortcuts. Everything is cooked with love," explained the young entrepreneur.
The story of Cowboy Cubans has deep roots. The Cuban sandwich emerged among Cubans who emigrated to Key West and Tampa.
The classic recipe includes Cuban bread, ham, roast pork with mojo, Swiss cheese, pickles, and mustard. The sandwich is pressed and toasted with butter to achieve a nice golden color.
Austin, known for its vibrant culinary scene, seems like the perfect setting for this proposal.
