The Guantanamo chef Dailis Ferrer Moreira, resident in Spain, shared with her followers two very easy recipes for Cuban food that will make you remember childhood times.
Dailis prepared on this occasion two types of nougat that are eaten on the island at any time of the year. They are made with roasted peanuts and are super easy to make. You can prepare them at home and have a fun time cooking with your children. You just have to choose: Crunchy or ground peanut nougat?
Ground peanut nougat
Dailis in this recipe uses 2 cups roasted peanuts, peeled without salt and 2 cups of brown sugar or white sugar in case you didn't have the "brown" one, as we also say in Cuba.
In an electric mixer, place both ingredients to make the peanut nougat. Beat a little to integrate them and then blend well until there are no whole grains left.
A firm paste will have been created. Transfer it to a mold covered with paper so that it absorbs the fat and place something weight on top that functions as a press so that you achieve a compact nougat. The chef recommends Let it "rest for about 24 hours or about 2 hours in the refrigerator."
Crunchy peanut nougat
He crunchy peanut nougat, Cuban style, also has only 2 ingredients and is very easy to prepare. You will need 250 g of peanuts (roasted and peeled), 250 g of sugar. You can also add a pinch of salt and you have the option of using honey to replace half of the caramel.
Prepare a caramel with the sugar. Use medium-low heat until the sugar melts completely and avoid stirring too much so it doesn't crystallize. Add a pinch of salt and the roasted peanuts.
Integrate everything well and immediately pour the mixture onto a greased or baking paper surface. Flatten everything, level it and let it cool a little, but before it cools, divide it into portions of your liking, so that you can achieve clean and more aesthetic cuts when presenting this delicious crunchy peanut nougat.
