Sergio´s Restaurant, the popular gastronomic establishment of Cuban food in Miami, wants to conquer this Friday the record for the longest croquette in the world.

"There's nothing stopping us from trying," he said.Carlos Gazitua, executive director of the restaurantMiami Herald this week, as they prepared for the important event.

The day chosen to fight for the record was thisOctober 1st when Croquette Day is celebrated in Miami in honor of Sergio's Restaurant. When interested in validating it with an official certification from Guinness World Records, they discovered that a croquette with gigantic dimensions already exists.

Thelargest croquette in the world It weighed 225.8 kg (497 lb) and was made by chefs Cherish and Van Dobben (both Netherlands) in Oostzaan on October 27, 2007.He measured 143 cm (4 ft 8 in) long and 47.3 cm (1 ft 6 in) in diameter. However, Gazitua explained to the press in Florida that that kibble had parts that were inedible.

Sergio's Restaurant will try to prepare thelongest croquette in the world in its store at 3252 SW on 22nd Street. The product will be far from the usual dimensions of this delicious food as it is expected to have alength 6 feet long and between 4 or 5 inches thick.

The kibble will not only be long but quite heavy. Its weight is equivalent to more than 200 croquettes that the store makes daily. It will weigh30 pounds and it will be ham.

They will use theclassic recipe from the restaurant with a bechamel base. They have faced several obstacles, the first was breading the gigantic croquette. However, the biggest dilemma was how to fry it since in this case it is not just a creative challenge but a technological one.

They commissioned the company to design a 7-foot-long fryer.Andy Iron Works, who made the custom equipment for the restaurant. They fused together the burners of four turkey fryers and forged a 7-foot-wide stainless steel bucket to hold the hot oil.

At least two people are needed to operate the gigantic fryer, which has its own wire basket to extract the product in perfect condition. The company stated that its team has been working on the project for several weeks and tested different variants to ensure that the result is successful.

The first test did not go well but the Sergio's Restaurant team believes that the adjustments in their strategies will allow them to achieve a record this Friday. The mega croquette will be the center of the celebrations and they assure that there will be free beer to celebrate. They will also unveil a mural by Miami artist Nate Dee that says “Croqueta Nation.”

In May Sergio's Restaurant made headlines for becoming thefirst Cuban food establishment in Miami to have a robot waiter. The debate soon reached social networks when many users questioned whether in the midst of the coronavirus crisis the robot left a human jobless.

The City of Miami and Miami-Dade County celebrate theOctober 1 as Croquette Day, in honor of the popular Cuban food restaurant chain Sergio. In 2018 they celebrated 20 million croquettes served and as an initiative they offered the exquisite dish for free at their Coral Way establishment.
